Experience

Having hunted, fished and dived in the Waitutu Forest area since he was teenager, Reynolds knows the lay of this hidden corner of remote wilderness so well he can promise clients the hat trick – a blue cod, groper and a red deer in just two days.

His stint in commercial fishing gave Reynolds the skills to tackle one of the world’s roughest coastlines and showed him where to find the crayfish (lobster), blue cod and paua (abalone) that still garnish these shores.

As well as managing the transport and finding the quarry, Reynolds also takes care of the food. Man style.

Fresh is always best and, with the addition of a few simple flavours, Waitutu’s bounty is further enhanced – resulting in campfire cookery that more than compensates for the facilities.

Mouth watering freshly filleted blue cod, sprinkled with brown sugar and lemon juice is chilled before being manuka smoked for 5-10 minutes – and served with a cold beer.

Chunky venison medallions – marinated overnight in a marmite mixture, then transferred to a smoking cast iron fry pan and seared each side – delicious with a cold beer.

Or wild pork, spread with sweet chill sauce … you get the picture.
